RECIPE: Seafood Spaghetti Tacos (Soft & Crunchy)

My kids are HUGE iCarly fans. Anyone who has ever watched the show has at least heard of Spaghetti Tacos. Carly’s brother, Spencer, considers it his specialty. I was thinking of something fun and creative to make for the kids for dinner one night so I settled on this dish because I knew they would be excited to be eating something they’ve seen so many …

10-Minute Taco Salad

Do you like Taco Salad? My husband LOVES tacos, but I’m sick of the same old boring soft-or-hard options… and I tried last week to make it “fun” by buying some of those flat-bottomed stand up tacos and… well, they just weren’t much fun after all. BUT since my husband LOVESSSS tacos, I had to think of SOMETHING.
And voila – Taco Salad. Simple. Quick. Delicious.
To …

RECIPE: Taco Pizza *meals-in-minutes!*

When I told my husband we were having taco pizza, he didn’t look too thrilled. I’ve never made one before and he’s never eaten one before, so it was going to be an experience LOL Not to mention, we were already hungry and if this turned out to be a bust, we’d have to start over with something else.
But, we sucked it up and decided …

RECIPE: Turkey, Bacon, & Ranch Wraps!

This is the first time I’ve ever actually made a wrap, but they were DELICIOUS.
I used all the ingredients I would use to make a turkey club sandwich (using shredded cheese instead of sliced and nixing the tomatoes because no one wanted them but me LOL) and wrapped them up in a flour tortilla, then cut it in half.
What you will need:

Flour tortillas
(10″ – adults …

Chicken & Rice {and stuff…}

I love a lot of texture in my food, so when I cook with pasta, I normally use a couple of different kinds. When I cook with rice, I normally add some type of pasta in with it. My chicken and rice actually has rotini and spaghetti noodles cooked into it as well.
This is a simple and quick meal which is VERY inexpensive – an …

Meals in Minutes: Baked Chicken & Wild Rice

This was a rather experimental dish. It was simple, quick, and I must say DELICIOUS. I used the following:
- Tyson boneless chicken breast fillets
- 2 packages of Uncle Ben’s Ready Rice {Long Grain & Wild}
- Seasoning Salt
- McCormick chicken taco seasoning mix
I cooked the two packages of wild rice in the microwave for 90 seconds as instructed on the label. I set them aside while …

Meals in Minutes: Pig-in-a-Blanket

My husband has been “fussy” because he’s tired of eating the same things all the time, SO I had to find some new things to try out. One thing I haven’t made in years are pigs-in-blankets. That’s what we had for lunch yesterday. It only takes about 15-18 minutes for prep & cook time combined, so I though I would share the idea with you …

Southern Fried Chicken… {finger-licking good}

First of all, neverrrrr cook chicken on heat above medium. You’ll be eating rare chicken with well done skin LOL {which by the way is pretty dang gross} … Anyway, this meal takes about 30-40 minutes total (less if you use 2 skillets – I cooked about 26-27 wingettes in one skillet) … I {of course} used Tyson chicken wingettes – I get 1.5 pound …

MEALS IN MINUTES: Mmm… Mmm… Good!

First of all, I just want to say my family thoroughly enjoyed this meal… My husband has actually mentioned our tasty lunch three times since we finished eating. I hope you enjoy it as well!
This week’s Meals-in-Minutes features a full menu ready to eat in about 30-40 minutes. Today’s lunch menu at my house included baked barbeque chicken wingettes seasoned with lemon pepper and seasoning …
